Breakfast Casserole

This is a pretty quick and easy breakfast casserole I just put together.

What you will need:
8 eggs
1 lb breakfast sausage
2 medium potatoes peeled
two medium tomatoes chopped
1/2 medium onion, chopped (optional)
grated cheese( to your preference, I like a lot of cheese)
salt, pepper, and garlic powder to taste

Ground up and brown the sausage. Drain the fat.

Grate the two peeled potatoes.

In and 8x8 greased pan, combine the shredded potatoes, sausage, tomatoes and onion.

In a bowl crack the eggs, add the salt, pepper, and garlic powder to taste.
whisk the eggs and pour over the potato mixture.

Add the cheese on top.

Bake in the oven at 400 degrees for 45 minutes or until a knife stuck in the center comes out clean.


I usually make this the night before and reheat in the morning for my husband. It's pretty good with a serving of fruit.

Welcome to my cooking blog! I've had so many friends ask me for easy recipes, I thought I would share them here. Any recipe that is featured on this blog has been tested and tried by me. Sometimes I find recipes that need a little tweaking.

I am a very busy stay at home mom and I like to have new ideas for a meal, but sometimes I don't have time to look over a long list of ingredients to make sure I have everything. And quite frankly, it's a little intimidating to have to remember so many steps and not have a lot of time to spare in the kitchen when my kids are running around. I get tired of making the same five things over and over, knowing that its easy and quick and my kids will eat it. I live with a bunch of picky eaters so I have to be creative. I hope this blog will help some of my readers to embrace the idea of making new meals without having to stress whether or not they have all the ingredients in their kitchen.

Feel free to send me some suggestions for recipes if you have one, as long as they are 8 ingredients or less.
